Ingredients

1 egg, room temperature

1 cup mashed banana

1 cup grated carrots

½ cup Greek yogurt

⅓ cup honey

1 teaspoon vanilla extract

1¼ cups gluten-free flour

¾ cup gluten-free oats

1 teaspoon ground cinnamon

½ teaspoon grated nutmeg

1 teaspoon baking powder

For topping

½ cup walnuts

½ cup cream cheese

¼ cup honey

Method:

In a bowl, combine the banana, eggs, and vanilla.

Mix the ingredients until smooth, then add the honey, Greek yogurt, cinnamon, nutmeg, and carrots.

Mix the ingredients again until smooth, then add the oats, gluten-free flour, and baking powder and mix until smooth.

Pour the mixture into a rectangular baking pan lined with parchment paper and spread evenly.

Bake in a preheated oven at 180°C for 45-50 minutes. Test with a dry knife or skewer to ensure the cake is cooked through; it should come out clean.

Leave to cool completely in the pan, then remove the parchment paper and transfer to a wire rack to cool further.

Prepare the optional topping by mixing the cream cheese with the honey until smooth.

Cover the cake with the mixture and add the chopped walnuts.

Refrigerate until the end of the first day in an airtight container.
