Diet Oat, Apple, and Cranberry Cake
This cake is rich in fiber thanks to the oats and antioxidants thanks to the cranberries, making it an ideal choice for a healthy snack.
Ingredients:
- 2 eggs
- 150g natural Greek yogurt
- 100g fresh or frozen cranberries
- 50ml natural honey
- 150g oat flakes
- 1 teaspoon vanilla extract
- 2 grated apples
- 1 sachet baking powder
- 1 teaspoon cinnamon
- 1 pinch of salt
Preparation:
1. Preheat the oven to 180°C.
2. In a large bowl, first mix the oats, baking powder, cinnamon, and a pinch of salt.
- Add the eggs, yogurt, honey, and vanilla. Mix vigorously until you get a smooth, homogeneous dough.
4. Gently add the grated apple and cranberries, being careful not to crush them to maintain their texture.
- Pour the mixture into a baking tray lined with baking paper and spread it evenly.
Cook for 30 minutes, then check for doneness with the tip of a knife; it should come out dry.
Leave the cake to cool in the pan for a few minutes before removing.
