Coffee-Flavored Chocolate Cupcakes
A healthy and nutritious cupcake that combines the flavors of coffee and chocolate. Gluten-free and sugar-free.
Ingredients:
3 eggs
200 ml date honey
1/2 cup coconut oil
1 tablespoon instant coffee, dissolved
1/2 cup almond milk
2 tablespoons raw cocoa
15 g baking powder
Vanilla powder
1 tablespoon butter
1 tablespoon apple cider vinegar
15 tablespoons almond flour
Chocolate chips
Decoration: Chocolate chips or almond flakes
Method:
-Preheat the oven to 180°C.
-Mix the eggs with the date honey and vanilla in an electric mixer until creamy. Gradually add the coconut oil, coffee and milk mixture, then the cocoa and mix well.
-Then add the almond flour and chocolate chips until you get a thick consistency.
-Then add the butter and mix with the mixer. Add the baking powder and mix, then the vinegar. Empty the batter into cupcake cases and decorate with
chocolate chips at the end. Put them in the oven for 25 minutes.
